Craving something crispy and salty? Making your own sweet potato chips is super easy and WAY less expensive than buying them in the store. Why is it that the healthy snacks cost so much more than the junk? Sweet potatoes are among the healthiest carb you can eat because they don’t mess with your glycemic index like regular potatoes.

- Preheat oven to 300 degrees
- Wash sweet potatoes and remove ends
- Use mandolin to cut potatoes in thin slices.
- Put ¼ cup coconut oil on 2 cookie sheets and melt in preheated oven
- Place sliced potatoes in single layer on oiled cookie sheets. They can touch but don’t let them overlap
- Sprinkle with sea salt. Turn over to get potato chips coated on each side with oil. Sprinkle with more sea salt. Add more coconut oil if needed.
- Cook for 20 minutes. Turn over being careful not to break potato chip
- Cook for another 20 minutes- Checking often the last 5 minutes to be sure they aren’t turning dark brown
- Add more time if the chips haven’t started to brown on the edges
- Remove from oven and cool on paper towels
- Store in airtight container for a week
The best way to tell of these chips are done? A taste test! Check a chip from the middle to make sure they are crispy throughout. The chips along the edges of the pan may get done before the chips in the center. Remove the crispy chips and allow the chewy ones to cook a bit longer. They cook fast once they start browning so watch them closely!
