Caesar salads have been one of our go to dinners for years. It wasn’t until recently that I started making my own dressing. Let me tell you! Boy, was I missing out! This is a super simple & quick dinner that is always sure to please!
- 1 Romaine lettuce torn into bite sized pieces
- 1 cup cherry tomatoes
- cup ½black olives
- 1 cup Fresh grated Parmesan cheese
- Caesar Dressing
- cup ½sunflower seeds or pine nuts
- 1 bulb of garlic
- cup ¼grated Parmesan cheese or nutritional yeast
- 1 tin of anchovies
- 2 lemons juiced
- 1 cup olive oil
- 1 teaspoon sea salt
- cup Optional- add ½of water if you would like your dressing to be thinner

- Prepare Caesar Dressing- add all ingredients to Vitamix or food processor and blend until smooth. Refrigerate until dinner is ready
- Make salads directly onto each each salad plate.
- Prepare Forking Epic Steak
- After steak has rested for 5 minutes, slice into 1 inch strips against the grain
- Place steak on top of salads
- Top with prepared Caesar Dressing
