Here is how to make Forking EPIC Oven Roasted Asparagus…
When choosing asparagus, I find that this is a personal preference. I like the thinner stalks because they cook more evenly and aren’t tough & stringy after cooking. The thinner asparagus gets yummy crispy spots on the florets and the stalks are tender so they are easy to eat.
Roast in preheated oven for 10 minutes- or until the edges just begin to brown. Gently reposition asparagus to make sure everything is cooking evenly.
Add pine nuts and Parmesan cheese and turn on the broiler. Watching closely broil for apx 5 minutes tI melt cheese and toast nuts. I like to add some more fresh garlic for this part.
If you are not adding the toppings, just give a gentle toss after 10 minutes and return to oven for 5 minutes. Tip- If your asparagus is thicker, you may need to add some cooking time. My asparagus is about as thick as a pencil and it cooked perfectly in 15 minutes. I cooked it without the toppings when I made Sweet & Spicy Pineapple Salmon and it was the perfect balance of savory, sweet, and spicy.
