
I try to avoid gluten at all costs. This made baked goods slightly tricky and I didn’t bake for years. I love to bake so I was determined to crack the gluten free code. Here is a recipe for gluten free pie crust that you can use in any of your favorite recipes.

2) Combine salt & baking mix in a large mixing bowl. Using fork, mix coconut oil into flour mixture. Make small well in flour for the liquid mixture.

3) Whisk together water and egg white.

4) Pour egg mixture into well made in the flour mixture.

5) Mix well until mixture forms a ball. Wrap dough in plastic & refrigerate 30 minutes

6) Remove pie crust from fridge and allow to rest for 10 minutes. Preheat oven to 350 degrees. Roll dough flat between 2 pieces of parchment paper. Turn dough over onto pie plate. Use fingers to smooth and press out cracks. Crimp pie edge with your fingers. Poke holes in crust with fork. Bake for 20 minutes. Crust will be very light brown.
