
Sandwiches are a treat in my house. We only eat gluten free bread once or SOMETIMES twice a week, so that makes sandwich night a special occasion. After a ton of failed attempts, I finally came up with a gluten free bread that is actually BREAD. I’ve found a a few ways to make these rolls and the Gluten Free Butter Rolls are what I used in this recipe. They were absolutely perfect for these sandwiches after I popped them in the toaster to get slightly crunchy in the edges.

Here is how to make EPIC BLT’s with Avocado…

Cook bacon until crisp

Slice Gluten Free Butter Rolls in half

Toast until they are slightly browned on the edges

Slice avocados in half, remove pit, and cut them in 3 sections

Spread each toasted roll with avocado section, salt and pepper to taste, and top half of the rolls with sliced tomato

Break bacon in half and put on top of tomato

Top each sandwich with avocado smeared bun

I mean… Just look at that sandwich! I have some of these rolls in the freezer and we are SO having these for dinner tonight!
