Just because I don’t eat a lot of bread doesn’t mean I don’t eat sandwiches. I love them! While at an airport and looking for something wholesome-ish to eat, I found a smoked turkey sandwich with green apple and blue cheese. That was my inspiration for these incredibly simple sandwiches that are shockingly delish!

- 2 fresh apples mandolined into ¼ inch slices
- 1/4 cup blue cheese crumbles and/ or sharp cheddar
- 6-10 fresh smoked turkey slices and/or Virginia ham slices
- 4 slices crispy cooked bacon halved
- any of your favorite sandwich toppings

- Clean apples and slice on mandolin to make your “bread” slices
- Cook bacon
- Stack your favorite lunch meat, the cooked bacon, and cheese on your apple “bread” to make your sandwich
