Ingredients
- Banana Layer
- 2 ripe bananas mashed (apx 1 cup)
- 4 large eggs
- 1/2 cup honey
- 1/2 cup coconut oil plus more for oiling the pan
- 1 lemon juices
- 1 tablespoon vanilla
- 3/4 cup gluten free baking mix
- 1/2 cup powdered stevia
- 1/2 teaspoon sea salt
- 6 oz freeze dried crushed
- “Peanut Butter” Layer
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 1 cup roasted salted cashews roasted peanuts can be used as well
- 2 tablespoons nutritional yeast granulated Parmesan cheese can be used as well
- 1 tablespoon vanilla
- 1 tablespoon sesame oil

Instructions
- Preheat oven to 350 degrees. Heavily oil 13x9 baking pan and set aside
- Melt coconut oil in large mixing bowl
- Mix honey, vanilla, lemon juice, and eggs with melted & slightly cooled coconut oil
- Add baking mix & sea salt and mix well
- Batter will be lumpy. Allow to rest for 5 minutes. Mix again
- Stir in crushed freeze dried bananas
- Put half the batter into greased baking pan
- Prepare the peanut butter filling- Mix all ingredients to Vitamix or food processor until smooth
- Add ½ of the filling in two thick horizontal streams, gently swirl banana batter & filling back and forth to make a marbled design
- Add last of banana batter, smooth to edges of pan
- Repeat step 9. Use a butter knife to drag thru all layers batter. First make horizontal passes every 2-3 inches and then repeat this process making vertical passes. The design will look swirled and marbled
- Bake for 30 minutes or until middle is set.
- Allow to cool for 15 minutes before cutting into squares for serving
