- 1 cup gluten free baking mix
- 1/2 cup coconut oil
- 1/2 teaspoon sea salt
- 1 egg white
- 1/4 cup cold water

Instructions
- Combine salt & baking mix in a large mixing bowl
- Using fork, mix coconut oil into flour mixture
- Make small well in flour for the liquid mixture
- Whisk together water and egg white
- Pour egg mixture into well made in the flour mixture
- Mix well until mixture forms a ball
- Wrap dough in plastic & refrigerate 30 minutes
- Remove pie crust from fridge and allow to rest for 10 minutes
- Roll dough flat between 2 pieces of parchment paper
- Turn dough over onto pie plate
- Crimp pie edge with your fingers
- Poke holes in crust with fork
- Bake for 20 minutes.
- Preheat oven to 350 degrees
- Crust will be very light brown
