Ingredients
- 2 fresh butterflied chicken breasts
- 2 large eggs
- 2 cups shredded coconut
- 2 tablespoons ground ginger
- 1 tablespoon onion powder
- 1 tablespoon Asian 5 Spice
- 1 tablespoon sea salt
- Coconut oil for waffle iron

Instructions
- Beat eggs in a pie dish with ginger, salt, Asian 5 Spice and onion powder.
- Butterfly chicken breasts and press flat.
- Dip chicken in egg wash and then into coconut.
- Press coconut onto both sides of chicken
- Heavily oil the preheated waffle iron with coconut oil
- Put the chicken breast onto oiled waffle iron and cook for 2 and a half minutes.
- Serve hot with your favorite dipping sauce. Enjoy!
